Ingredients

    1 medium onion, chopped
    2 cloves garlic
    4 cups chicken broth
    1 cup lentils
    1/2 cup shredded carrot
    4 slices cooked bacon
    4 asparagus spears chopped
    1 thai chili
    1/2 tsp salt
    1/2 tsp black pepper
    1/2 tsp cumin

Tips

Cook bacon in microwave on paper towel to cut down on fat.


Directions

1. Chop onion and garlic and add to medium pot with olive oil, simmer until onion is translucent.
2. break thai chili in half and add to pot with chicken stock. Bring to a boil.
3. Add lentils, reduce heat and let simmer until lentils are tender. (approx 30 mins)
4. remove 3/4 of soup and add to blender or food processor and puree. Return to pot with remaining 1/4 of soup.
5. Add carrot, asparagus, bacon and seasoning, let simmer for 10 mins more.

Serving Size: Makes 4 1.5 cup servings
