Ingredients

    2/3c whole wheat flour
    1/3 tsp baking soda
    1/4 tsp salt
    1/3c splenda brown sugar blend
    1/2 tbsp butter softened
    1 egg
    1 mashed overripe banana
    1 shredded carrot
    2 tbsp plain nonfat yogurt
    1 tbsp davinci sugar free flavor (try coconut, rum, ammaretto etc)
    1/2 oz dark coconut rum (optional)
    1 tsp vanilla extract
    1 tsp ground cinnamon
    1/8 cup chopped toasted walnuts

Tips

Best when warm! Try adding unsweetened toasted coconut flakes, or raisins if you've got a higher cal budget. Also if you're not a fan of coconut you can use regular flavors as well.


Directions

combine flour, soda and salt, and cinnamon in a bowl. In another bowl or mixer on higher speeds, combine sugar and butter adding in the egg. Next add banana, carrot, yogurt, flavor syrup, and finally the vanilla extract. Mix well. Stir in nuts and place in a smaller loaf pan baking on 325-350 for about 30 minutes or until bread is just cooked through. For moist effect bread should feel ever so slightly under-done. Allow to cool, cut into slices and enjoy!
