Ingredients

1-1/2 cup flour or whole wheat pastry flour or combination
1 tsp. baking soda
1/2 tsp. salt
2 banannas, ripe
1/2 cup vanilla yogurt, nonfat
2 eggs
1tsp. vanilla
1/2 cup canola oil
2 packets truvia
1 apple, finely chopped
2 packets, truvia
1/2 cup craisins or raisins, finely chopped
1/2 cup walnuts, chopped
Tips
I make half of the muffins with out nuts for my grandchildren. I mark the ones with nuts by sprinkling the tops with nuts.
Truvia is an optional ingredient in this recipe. Use a little honey, agave or your favorite sweetener. If you want to use sugar, use 1 cup or less.
Directions
Whisk dry ingredients together in a medium size bowl.
In a separate bowl combine banannas, yogurt, eggs, vanilla, canola oil and 2 packets of truvia with a mixer until smooth. Chop apple, craisins, and walnuts, combine together with the remaining 2 packets of Truvia. Add dry ingredients to bananna mixture only until moistened, add chopped ingredients. Stir to combine. Spray muffin cups with Pam. Fill muffin cups . Bake at 325 degrees. Check in 20 minutes. Add more time if needed.
