Introduction

Ingredients

    40 cups Turkey Broth (see my recipe for Homemade!)
    8 cups turkey breast, cooked and chopped
    4 cups carrot, chopped
    2 cups fresh mushrooms
    2 cups celery, chopped
    1 cup yellow onion, chopped
    1 cup corn (canned)
    1 cup black beans
    2 Tbsp Extra Virgin Olive Oil
    5 cloves garlic, minced
    1/4 cup cajun spice mix

Tips

This is a huge amount of soup, so the recipe could easily be halved or quartered. This is about how much I make from one turkey's worth of bone broth and some extra veggies in my 12 Qt. crock pot. Can any extra and save for later!


Directions

In a shallow pan, saute onion and mushroom (and garlic, if desired) in olive oil until onions are slightly transparent, about 5 minutes.

Combine all ingredients into a large stock pot or crock pot, and simmer for 15-20 minutes until all ingredients are warm.
