Ingredients

    10 oz (aprox 2 5 oz cans) Light Tuna in water
    2 Large Hard Boiled Egg
    2 Large Roma Tomatoes
    1/2 cup chopped Green Onion
    1/2 cup chopped Red/Purple Onion
    1/2 cup grated Carrots
    I oz (1 serving/ 2/3 spear) Pickle
    1 tbsp Regular Mayonnaise
    3 tbsp Plain non fat yogurt
    1 tbsp Yellow Mustard
    1 dash Black Pepper (to taste)
    1 dash Salt (to taste)

Tips

Pair with tostadas, crackers, pita, any "bread" you'd like, or a green salad.

I paired this with weight watchers whole wheat light bread (80 calories/2 slices).


Directions

Bring eggs to a boil, cover pot, turn off burner and let sit for 12 minutes while eggs cook.

Prepare veggies and combine with tuna and dressing mix and eggs.

Serving Size: 5 heaping piles of tuna salad.
