Number of Servings: 6

Ingredients

    For Couscous:
    1 1/2 c uncooked Israeli or pearl couscous
    1 7/8 cups water
    pinch of salt
    For Salad:
    1 small red onion
    1 small yellow squash
    1 small zucchini
    1 small red bell pepper
    1/2 cup olive oil
    Juice of 1 1/2 fresh lemons
    3/4 pound (12 oz) crumbled feta cheese
    black pepper

Tips

This recipe keeps well and gets better the longer it stays in the refrigerator so feel free to make ahead. Recipe doesn't call for fresh herbs, but adding them would be a nice idea - whatever you like (cilantro, basil, parsley or oregano).


Directions

Cook couscous in water as directed on package. Chop all vegetables into small pieces. Put into bowl. Cover with warm couscous, cover and let steam (do not mix together until veggies have steamed for at least 2 minutes). Top with crumbled feta cheese, olive oil, lemon juice, and black pepper. Chill until ready to serve as main dish or side.

Serving Size: Makes 6 servings of about 1 cup each
