Ingredients

    1/2 C Uncle Ben's whole grain brown rice
    6 TBS Safeway Select Chipotle Salsa
    1 Can Rosarita no fat frefried beans
    1 C Cheddar or Colby Cheese, low fat, shredded
    1/3 C Onion, chopped
    8 El Pollo Loco 6.5" flour tortillas
    Spices to taste to include cumin, garlic powder, and black pepper. If you like sour cream you might add low fat sour cream but it is not included in ingredients or calorie count.


Tips

Quick and easy to fix, eat, and clean up after! Tortillas wrapped in dampened paper towels and warmed in the micro on reheat for 30 seconds helps.


Directions

Saute onion and add beans and seasoning. Warm but do
cook to liquid state
Cook rice per package instructions and add to bean/onion
mix
Add cheese to mix and head slightly until cheese melts
Warm tortillas using method you prefer. Portion into 8 servings into the 8 tortillas (add 1 teaspoon sour cream at this point if you like,) wrap, and serve.
