Ingredients

    Buttermilk, lowfat, 2 cup
    *Country Choice Organic Old Fashioned Oats, 1 cup *Designer Whey Protein - 100 Good for you Calories 100% Whey Protein Powder - 1 scoop (26 grams), 52 gram(s)
    Baking Powder, 1 tsp
    Baking Soda, 1 tsp
    Salt, 1 tsp
    *Wheat flour, white, bread, enriched, 1 cup
    *Wheat flour, white, all-purpose, unenriched, 0.75 cup
    *Splenda Brown Sugar Blend, 25 tsp
    Egg substitute, liquid (Egg Beaters), 0.5 cup
    Vanilla Extract, 1 tsp
    Lemons, 1 fruit without seeds
    Blueberries, frozen (unsweetened), 1 package (20 oz)
    Walnuts, 0.5 cup, chopped
    Brown Sugar, 6 tsp packed

Directions

Combine Buttermilk and Oats and soak overnight. Preheat oven to 350 degrees. Add the rest of the ingredients except 6 tsp brown sugar and welnuts until well blended. Spray muffin cups with cooking spray and add muffin mix. Tope each muffin w walnuts and 1/2 tsp reg brown sugar. Bake for 30 minutes until toothpick comes out clean.
