Ingredients

    Ingredients:

    *Whole Foods 365 Organic 100% Whole Wheat Pastry Flour, 4 cup

    Egg, fresh, 2 large

    Sour Cream, reduced fat, 1.25 cup

    Bananas, fresh, 5 large (8" to 8-7/8" long)

    *Grandma Hoerner's Original Big Slice Apple Sauce, All Natural, 1.5 cups (any apple sauce will do)

    Freshly squeezed Orange Juice or Lemon Juice, .25 cup

    Granulated Sugar, 1.5 cup

    Brown Sugar, .5 cup, unpacked

    Baking Powder, 3 tsp

    Baking Soda, 3 tsp

    *Apple Cider Vinegar, Bragg Organic 1 oz / 3 Tbsp.

Tips

The vinegar and the baking soda will cause this bread to rise, so do not overfill pans. This helps the whole wheat pastry flour act more light and fluffy like all purpose flour, but you still get the fiber! This works in almost ANY pastry type-baking recipe.


Directions

Heat oven to 350. Grease and flour bottoms and sides of mini loaf pans or bread loaf pan or muffin tins. Mix all wet ingredients together until very smooth. In a separate bowl, stir dry ingredients together to incorporate. Add dry ingredients to wet ingredients and stir until fully combined. Do not over mix. Fill pans with mixture about 3/4 full. Bake appx. 30 - 40 minutes until fully cooked in middle. (If you find the bread browning more quickly than the middle is cooking, tent some aluminum foil over it after about 30 minutes of baking so the batter won't stick but the browning will slow.)

Serving Size: Makes appx. 32 "medium muffin sized" portions.
