Ingredients

4 large zucchini
1 lb ground turkey
1 796ml can of diced toms
1 156ml can of tom paste
5 tbsp grated parm
180 g grated lite mozzarella
spices as desired
Tips
Can serve directly on plates, layering lasagna style, instead of layering in casserole dish and baking if short on time.
Directions
Cut zucchini into planks. Place on sheet pan. Spray with pam and then sprinkle with salt, pepper and italian seasonings. Cook 5 min then flip and season other side and cook 5 more min.
Cook ground meat (add fresh onion and garlic if desired) Drain if fatty. Add seasonings as desired and canned tomatoes and tomato paste.
Layer zucchini, meat sauce and cheese in casserole dish as for lasagna. Bake in over to melt cheese.
