Ingredients

1 whole chicken
1 med. onion (rough chop)
1 1/2 tbsp. curry powder
juice of one lemon
8 oz can tomato sauce
1/4 cup parsley (rough chop)
1/2 sweet bell pepper
15 oz can green beans
15 oz can kidney beans
1 cup dry white rice
1 small bag peas and carrots (frozen)
Tips
You may subsitute boneless skinless chicken and chicken broth for water, but it is not nearly as tasty.
Directions
Cover whole chicken with water in pot. Add parsley, onion, lemon juice, curry, tomato sauce and roughly chopped bell pepper to pot. Bring to a boil, keeping at a slow boil for the first hour. Be sure to maintain water level for soup base. Pull chicken from bone, or chop cooked chicken. Add remainig ingredients,cover and cook for one hour or until rice is tender. Salt and pepper to taste.
