Introduction

I’ve been looking for non-standard things to cook in my crock pot. There are several recipes for macaroni and cheese, but they either include cheese soup (ew…), Velveeta (ew, ew, ew…) or already cooked pasta among the ingredients. I needed to keep looking. Finally, I found, and modified a recipe from AllRecipes.com that was so tasty; I got mugged for my serving last night. I’ve been looking for non-standard things to cook in my crock pot. Ingredients

    8 oz. brown rice macaroni, uncooked
    2 eggs
    1 12 oz can non-fat evaporated milk
    1.5 C non-fat milk
    1 t white pepper
    1 t garlic powder
    1 T Ethnic Delights Garlic and Herb blend
    olive oil, to brush crock pot
    4 cups shredded cheddar or cheese blend

Directions

Either brush or spray your crock pot’s interior with olive oil. Set to Low. In a large bowl, beat eggs, milk and spices together. Fold in 3 cups of the cheese and the dry elbows. Pour into the warming crock pot and top with the reserved one cup of cheese. Cover and let cook for 4.5 to 5 hours, depending upon your unit. You will want to open it up. Do not open; do not stir until at least 4.5 hours have elapsed. It’s worth it.

Serving Size: Supposed to serve six, but that's very generous
