Ingredients

    1 (8.5 ounce) package jiffy corn muffin mix
    1 cup canned cream style corn
    1 small can mild Green Chili
    1 large egg, lightly beaten
    1/3 cup plain low fat Yogurt
    1/2 cup shredded sharp cheddar cheese


    3/4 pound Ground beef, extra lean
    1 cup cooked black beans
    1 medium onion, diced
    1/2 packet low sodium Taco Seasoning Mix

Directions

Preheat oven to 400 degrees. Brown meat with onions in a 10 inch over safe skillet. Meanwhile, mash half of the beans. Drain fat and add whole and mashed beans, taco seasoning, 1 TBS of the green chills, and 3/4 cup water. Allow to simmer and thicker while you make the cornbread topping.

In a medium bowl, stir together yogurt, egg, corn, cheese, and green chilis. Add cornbread mix and stir just until evenly moist. Pour batter over hot meat and bean mixture in skillet. Move skillet immediately into the hot oven. Bake for about 20 minute or until cornbread is cooked through and starts to brown on top. Remove from over and allow to rest for about 5 minutes before serving.
