Introduction

Ingredients

    1 large jar Great Northern Beans
    6 Cups Chicken Broth (reduced-fat)
    1 large onion, chopped
    2 T garlic, minced
    8 oz. green chili peppers
    1 T oregano
    1 T cumin
    1/2 t red pepper
    1/2 t salt
    1/2 t black pepper
    4 C chicken breast, cooked and cubed
    1.5 C Monterey Jack cheese, shredded
    3/4 C sour cream, reduced-fat

Directions

Combine all ingredients, except chicken, in large stockpot or Dutch oven. Bring to a boil, then reduce heat and simmer, covered, 1 hour. Add chicken and simmer 30 minutes longer. Alternately, you can sear the chicken with the onions and garlic in the stockpot/Dutch oven first, in a little olive oil, then just add the rest of the ingredients on top and simmer for about an hour.
