Ingredients

1-1/4 cup buttermilk
3/4 cup old fashioned oats
1/2 cup wheat bran
1/3 cup becel light margerine
1/2 cup brown sugar
1 egg
1 teaspoon vanilla
1/2 cup whole wheat flour
1/2 cup flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 cup dried sweetened cranberries
Topping (Optional):
Ground pecans (approx" 1teaspoon)
Cinnamon
Tips
Don't overmix! This will result in heavy textured muffins (though still tasty).
Directions
Heat oven to 400 F
Line muffin tin with 12 liners or grease bottoms.
In a small bowl, pour buttermilk over oats & bran.
In a medium sized bowl, mix margerine, sugar, egg & vanilla. Stir in flours, baking soda, cinnamon, nutmeg & salt just until flours are moistened.
Fold in oat mixture & cranberries, divide evenly into muffin cups.
Sprinkle crushed pecans & cinnamon evenly over the tops of the filled muffin cups
Bake 15 minutes or until golden brown & toothpick comes out clean.
