Introduction

There are ways to make this lighter (switch ground turkey for beef, lose the avocados, use light cheese) but frankly, it's SO good it's worth the extra calories. Loaded with fiber and all kinds of stuff to keep you going for hours, it's all you need to eat for dinner! Ingredients

    1 lb extra lean ground beef
    1 large red bell pepper, chopped
    1 large yellow bell pepper, chopped
    1 small can green chilis
    1 pkg taco seasoning (low sodium)
    3 Tortilla Factory Low Carb tortillas
    1 can refried beans
    1 avocado, sliced
    6oz shredded cheese (Mexican blend works well)

    Light sour cream or greek yogurt & salsa to top

Directions

In a large skillet brown beef with peppers, chilis and taco seasoning. Set aside.

Spray a baking dish (I happen to have a round one that fits the tortillas perfectly, but if you don't, cut the tortillas into quarters and layer to fit) and preheat oven to 350 degrees.

Start with a meat layer on the bottom, then add tortilla spread with beans, layer on avocado slices and cheese. Continue to layer in this order until all ingredients are used. You should have a tortilla, bean & cheese layer on top.

Bake in the oven for 40 minutes or until top tortilla and cheese are browned.

Serve with fat free sour cream or greek yogurt, diced fresh tomatoes, or salsa.
