Ingredients

1Large La Tortilla Factory Low Carb-Low Fat Tortilla.
3 oz. raw, peeled shrimp
1 C Romaine lettuce, shredded
1/4 yellow onion, sliced
1/4 red bell pepper, sliced
2 cloves garlic, pressed
1/8 tsp salt
1/8 tsp cayenne pepper
PAM for sauteeing
CAESAR DRESSING
1 tsp anchovy paste
1/2-1 clove garlic
1 oz. Mori-Nu silken, soft Tofu
1 tsp dijon mustard
1 tsp worcestershire sauce
1 tsp red wine vinegar
1 tsp lemon juice
fresh black pepper to taste
Directions
1. spray the peeled shrimp with PAM, mix with 2 cloves pressed garlic, salt and cayenne pepper. Set aside to marinate for about 10 minutes.
2. Put all the dressing ingredients in a blender and mix until blended together. Set aside.
3. Spray pan with PAM and sautee sliced onion and bell pepper until almost soft. Put aside and keep warm.
4. Spray pan with PAM again and sautee the shrimp for about 5 minutes, until just opaque.
5. Put a tortilla on a plate and heat in microwave for 20 seconds.
6. Place the shredded romaine on top of the tortilla, then add the sauteed onion and bell pepper, shrimp, and drizzle with caesar dressing. Wrap up and enjoy!
