Ingredients

    3/4 Cup Quinoa
    1 1/2 Cups Vegetable Broth

    Veggies:
    2 Green Onion
    3 Cloves Garlic
    2 Cup Mixed Peppers, diced
    1 (15 ounce) can Black Beans, rinsed & drained
    1-2 ripe Mango's, diced

    Dressing:
    1 tsp sesame oil
    1 tsp olive oil
    1-2 tbsp. rice wine vinegar
    1-2 tbsp. honey
    1/2 cup chopped fresh cilantro
    salt & pepper to taste
    1 tsp. ground cumin
    1 tsp. hot sauce

Tips

I find this tastes better if you let it sit in the fridge for an hour or two.


Directions

Cook quinoa according to package directions (usually bring to boil then reduce temp and simmer for 15 mins). While quinoa is cooking, cut and chop veggies and add to a large bowl. Cool quinoa and add to bowl with veggies. Whisk together dressings ingredients and season to taste.
