Ingredients

    1 head broccoli (1 pound), cut into florets, stems sliced
    1 tablespoon extra-virgin olive oil
    1 onion, diced
    3 garlic cloves, sliced
    One 15-ounce can white beans (cannellini or other), drained
    2.5 cups chicken stock
    Kosher salt and freshly ground black pepper
    4 Tbls pine nuts, toasted (1 Tbl each serving)
    4 Tbls Parmesan, shredded (1 Tbl each serving)

Directions

Steam broccoli on stovetop or in microwave until tender, about 3 minutes.
Heat oil in a medium pot over medium heat. Saute onion and garlic until translucent, about 5 minutes.
Add beans and stock and bring mixture to a simmer.
Remove from heat and add broccoli then puree with an immersion blender. Season to taste with crushed red pepper flakes, salt and pepper. Sprinkle each bowl with 1 Tbl each toasted pine nuts and shredded Parmesan.

Serving Size: Makes 4 1-cup servings (garnish included n calories)
