Introduction

A small batch of low-calorie, very healthy, super tasty muffins! A small batch of low-calorie, very healthy, super tasty muffins!
Number of Servings: 6

Ingredients

    1/4 cup unsweetened applesauce
    1/4 cup milled flax seed
    3 tbsp liquid egg whites (or 1/4 cup)
    1 scoop Jay Robb vanilla whey protein powder
    1 medium fresh banana, mashed
    4 vials of vanilla stevia liquid

Directions

Preheat oven to 350 and grease muffin pan with nonstick spray.
In a medium mixing bowl, stir together mashed banana, applesauce, sweetener and egg whites; combine well. Add in the flax and protein powder.
Spoon into muffin pan and bake for 10-15 minutes (mine took only about 10) or until a toothpick inserted into the center comes out clean. Remove carefully while still warm.
Yum!

    These are quite small compared to commercial muffins, so it is surprising how satisfying they are! I added a few walnuts to my second batch because I had them on hand. I can see how this recipe works as an excellent base for putting in nuts or berries...of course, that adds calories! - 1/20/15
