Ingredients

3 cups whole wheat pasta
1 cup diced peppers
1 cup chopped mushrooms
1/2 cup chopped onion
1/2 tble olive oil
1 can (14.5 oz) Hunts tomatoes with basil and garlic
1 tble tomato paste
1/4 cup vegatable broth
1 tble maple syrup
1-6 oz jar marinated artichoke hearts, chopped
1/2 tsp dried basil
pepper to taste
4 tble parmesan cheese
Directions
Cook noodles accord to directions.
Saute peppers, onions, and mushrooms in olive oil until crisp tender. Add the garlic and cook two more minutes. Add tomatoes, paste, broth, maple syrup, and spices. Simmer for 3-4 minutes. Add artichokes and warm through. Add pasta and serve with 1 tablespoon parmesan cheese each.
