Introduction

Since Daniel Fast Friendly recipes were hard to find, I worked out a few of my own. We actually used this to stuff bell peppers first and liked it so decided to see if it would work in patties. Ingredients

    4 teaspoons olive oil, divided
    1/2 cup chopped onion
    1/2 cup chopped mushrooms
    1 Tablespoon oregano
    1 Tablespoon basil
    1 Tablespoon minced garlic
    Freshly ground pepper to taste
    2 cups drained and rinsed black beans, well drained
    1 cup cooked brown, whole grain rice

Directions

In small skillet, heat 2 tsp oil. Add chopped onions, mushrooms, garlic and seasonings. Saute until onions are tender. In large mixing bowl, pour beans and rice. Add ingredients in skillet. Mash with potato masher until well blended. Smooth out in bottom of bowl and cut in 4 equal portions. Heat lightly oiled griddle on medium heat. Pour about 1/2 tsp oil into hand and coat both hands. Form 1/4 of bean mixture into pattie coating evenly with oil. Repeat with other 3 portions. Place on hot griddle and brown - 5 to 7 minutes per side. Serve with a Daniel Fast Friendly Chutney or sauce like my gingered pineapple cranberry chutney.
