Introduction

I came up with this variation on my own, using what I had on hand, as I usually do. I added in Curry Powder and switched out the regular flour with whole wheat, unbleached flour. I also found that Extra Lean Stew Beef is becoming more available and it comes out just as "melt-in-your-mouth" tender as the regular, more fattening stew chunks can be. My husband LOVED it and so did I, and we're picky eaters. LOL I came up with this variation on my own, using what I had on hand, as I usually do. Ingredients

    1 - 1 1/2 lbs Extra Lean Beef Stew Meat Chunks
    1 28oz can of Diced Tomatoes, drain excess fluid, leave moist
    1 med or lg Sweet Yellow Onion, cut into large wedges
    1 sm bag of Petite Carrots - they're smaller & sweeter than baby carrots - no peeling necessary! (Easy button!)
    1 or 2 large potatoes, russet (or equivalent of preferred potato) - cut into chunks
    3 Cups Water
    Salt & Pepper to taste (prefer coarsely ground black pepper - gives better flavor than finely ground)
    Curry Powder to taste - I used approx 1/2 tsp to give it a little something extra, but not "hot"
    2 Bay Leaves
    1/4 c Flour - Unbleached, White Whole Wheat Flour
    1/2 c water - cold

Tips

Serve with light whole wheat dinner rolls or corn bread.
SO yummy! I love to dip my rolls in the broth/juices. (I used to put a few pats of butter on the rolls, but not anymore! That's how awesome the broth is)


Directions

Pan Sear (optional) extra lean stew beef chunks for approx 3-5 mins to seal in juices
*If you choose not to pan sear the meat first, just put it right into the crock pot.

While beef is being seared (or not) add the bag of Petite Carrots to the Crock Pot.

Then cut 1 large, Sweet Yellow Onion into coarse wedges.

If searing your stew beef, now put the beef into the Crock Pot and transfer the Onion wedges to the frying pan, lightly sautee them for approx 2-3 mins until the edges are a tad brown and they smell REALLY good. :-)

Peel (optional) and cut Potato into med-large chunks.

Add sauteed onion wedges, potato chunks and 3 cups of water to crock pot.

Now add in salt, pepper, curry powder and bay leaves and any other spices you want.

Cook for whatever time you want, but LOVED how it came out on the 4 hour (high) setting so any setting works well with this.

When ready to serve, mix 1/2 cup of chilled/cold water and 1/4 cup of whole wheat flour. .

Once mixed, add it directly to stew and stir thouroughly and it will thicken it up just right.

Serving Size: Makes 6-8, 1 cup sized servings or approx 1 large ladel full
