Ingredients

Aidells Cajon style andouille sausage, 2 4oz sausages, sliced
6 oz chicken tenderloin (boneless, skinless), cut in bite size pieces
1 8 oz package saffron yellow rice, spanish style
1 can ready cut diced tomatos
1 can black beans, rinsed and drained
3/4 cup chopped onion, large dice
1/2 red bell pepper, diced
2 cloves garlic, crushed
1 tsp creole seasonong
olive oil
Directions
Cook the rice according to package instructions.
Saute onion and pepper in 1 tsp olive oil for 1 - 2 minutes, remove from pan.
Saute chicken in 3 tsp olive oil until done, remove from pan.
Add sausage to pan and brown on both sides. Add garlic and saute for 30 seconds. Add tomatoes, water, chicken, onions,and peppers, Stir. Add cooked rice and mix well. Add seaoning to taste. Cook ver low heat for another 10 minutes.
Serving Size: makes 5 large servings
