This side dish idea for one who can not eat dairy product. It is a hit for my husband and friends who love mozzarella cheese but can not have it. Ingredients

- 227 grams/1/2 lbs. of Tofu cut to medium dice
- 4 large ripe Roma tomato, core and cut into dice
- 6 tbsp of balsamic vinegar
- 2 tbsp of extra virgin olive oil
- 1 tsp of honey
- 1 dash or 1/4 tsp of black pepper
- 1 dash or 1/4 tsp of salt
- 2 tbsp of parsley chop fine
Tips
A touch of honey and ripe tomato will bring this side dish more flavorful..
Directions
1. In a large bowl, mix all ingredients except dice tofu and dice tomato, bring to your favorite taste. You can add more ingredient in any items if you needed it.
2. Add dice tofu into the mixing bowl, gently fold the sauce over tofu.
3. Add dice tomato into the mixing bowl, fold the sauce and tofu together.
4. Marinate tofu and tomato in the sauce for at least 10 minute in refrigerator for best result at 30 minute.
5. Garnish with chop parsley before serving.
