Extremely delicious & easy pizza! Extremely delicious & easy pizza!
Number of Servings: 4

Ingredients

    4 whole wheat tortillas
    1 package fresh baby spinach
    4 cloves garlic, minced
    4-5 large scallops
    4 green onions (white & green parts), sliced
    8 baby bella mushrooms, sliced
    4 roma tomatoes, chopped
    8 T grated fresh parmesan cheese
    Salt
    Black pepper
    Crushed red pepper
    Dried oregano

Directions

Preheat oven to 350. Sautee garlic in olive oil for 1-2 minutes over medium heat. Add spinach & saute until just wilted. Remove to a bowl. Add scallops in same pan & sear on both sides, cooking until almost done, approximately 5 minutes (just slightly raw on inside - don't cook too long or they will become tough & lose some flavor),. Remove from pan & chop.
Bake tortillas in oven for 5 minutes. Top with spinach, tomatoes, scallops, green onions, mushrooms, and parmesan cheese. Drizzle a small amount of olive oil over each pizza. Sprinkle with salt, pepper, crushed red pepper, and oregano to taste.
Bake for 7 minutes.
