Introduction

Ingredients

    8 oz cottage cheese, drained
    1 10-oz package frozen spinach, drained well
    10 egg whites
    1/4 c. 2% shredded cheddar cheese for topping
    Seasonings you prefer (salt, pepper,rosemary, cayenne, dash of tobasco, garlic or onion powder, etc)

Tips

This is surprisingly good (and hard to tell it's made with cottage cheese)! I make one of these on Sunday night and then reheat a portion each day of the week for a protein-packed breakfast.


Directions

Combine all ingredients, except the cheddar cheese and mix well, then spoon into greased baking dish (I use 9 by 9) and bake for 45 minutes or until fluffy and stiff. Then top with cheddar and broil until bubbly.
