As a diabetic, I'm always looking for low carb comfort food and snacks. These nachos are higher in fat than I normally would eat, but they are SO yummy! Ingredients

    *Hy-Vee Bite Size Tostados (chips), 1 serving
    *Onion (raw), chopped, 2 tbsp
    *Kraft Shredded 2% Milk, Mexican Cheddar Jack, 0.25 cup
    *All Natural, Honeysuckle White, Ground Turkey, 2 oz
    *Hy-Vee Light Sour Cream, 1 tbsp
    *Hy-Vee Taco Seasoning Mix, 30% Less Sodium, 1 tsp
    *Hy-Vee Salsa, Mild Corn and Black Bean, 2 tbsp
    *Hy-Vee Sliced Black Olives, 1 tbsp

Tips

I listed this as a snack, but because of the carb count, I used it as a main entree for dinner and it was very filling!


Directions

Cook turkey until pink is gone. Add taco seasoning per package instructions and mix well. Simmer 3-5 minutes on medium until thickened. Measure out 2 oz of seasoned meat and set aside. Arrange all 20 chips on a salad plate. Sprinkle one-half of the shredded cheese on top; heat 15-30 seconds or until cheese is starting to melt. In small bowl, mix the cooked turkey and the salsa together. Dump into the middle of the chips, add onion, sour cream, remaining cheese. Top with sliced olives.

Serving Size: Makes one nice sized individual serving
