Ingredients

2 quarts V8 Juice (8 cups)
1 10 oz bag shredded cabbage
10 7-8" celery stalks, sliced
1 onion, chopped
5 garlic cloves
1 cup fresh green beans, cut into 2" pieces
1 medium zucchini, sliced and quartered
1 medium summer squash, chunked
1 15-oz can Diced Tomatoes (original recipe says to drain but I leave the juice in)
1 14.5-oz Navy Beans canned, rinsed and drained
Parmesan Cheese - optional garnish (not in nutrition info)
Basil Pesto - optional garnish (not in nutrition info)
Tips
I make this up and freeze in individual 1 cup containers for a quick veggie meal at work. Very easy!
Directions
1. Combine broth, cabbage, celery, onion, garlic and green beans in stock pot. Bring to a boil, reduce heat and simmer until green beans are just tender.
2. Add tomatoes, zucchini, summer squash and navy beans. Cook an additional 45 minutes.
3. Serve hot, sprinkled with Parmesan cheese or with a spoonful of pesto stirred in if desired.
