Introduction

A really yummy beef and broccoli that is way better than take out. It is much healthier too. I typically serve over quinoa, but rice would work too. (Neither is included in the nutrition info.) I am still experimenting on ways to decrease the soy sauce. You can simply decrease the amount used, but it would decrease the marinade amount. Ingredients

    Beef round steak, trimmed and thinly sliced, 1#
    Soy sauce, 1/3 cup
    Dry Sherry, 1 tbsp (optional)
    Brown sugar, 1 tbsp packed
    Corn starch, 2 tbsp
    Ginger 1 tbsp (I use from a jar)
    Scallions, 7, cut into 1" pieces
    olive oil, 2 tbsp
    Broccoli, 12-16 oz (fresh or frozen is fine)

Directions

Combine beef with next 5 ingredients and marinade for 4-8 hours.
Steam broccoli for 2-3 minutes (I usually use the microwave).
Heat oil in a heavy skillet (iron is best) or wok over high heat.
Allow pan to get very hot. Add half the meat, leaving most of the marinade in the bowl. Add half the scallions. Spread meat in a thin layer as you add it to pan, but do not stir. (You want the meat to get brown) Turn meat to the other side and cook for 30 seconds. Remove to a clean plate or bowl. Allow pan to get very hot again and repeat with other half of meat. After turning it, add the first plateful of meat, the marinade, and the broccoli. Stir over high heat for 30 seconds, then turn off heat. Mixture will thicken as it sits.
Serve immediately over quinoa or rice. Sprinkle crushed red pepper over the top to give it some spice.
