Number of Servings: 4

Ingredients

    4 - Boneless/Skinless Chicken Breasts (preferably 1lb for the entire package -- 4oz each)

    2 cup - Cherry tomatoes cut into quarters

    2 cup - Cubed zucchini (unpeeled)

    5 Tbsp - Good Balsamic Vinegar (one that you would feel comfortable putting alone on a salad)

    1 Tbsp - Extra Virgin Olive Oil (Light)

    1 cup - Your Choice of Brown Rice

Directions

1- Defrost Chicken, then slice into equal size cubes
-- set aside
2- Dice tomatoes and zucchini on separate cutting board
-- set aside
3. Put oil in skillet on high heat, Add Chicken and saute until almost cooked through

4. Add vegatables

5. Add vinegar

6. Turn heat to medium/hot and cover. Let simmer for about 15 minutes with lid on and 15 minutes with lid off until most of the liquid has evaporated

7. While chicken is simmering make rice per instructions on the bag/box

Serve Chicken Mixture Over Rice
