Introduction

I call this "Apple Fool" because I'm a fool for McIntosh apples, and because though this tastes like a sinful dessert, it's about as healthy as I know how to make it. It satisfies the need for "something sweet" without breaking the calorie/carbohydrate bank. Ingredients

    Macintosh Apples, fresh, 6 small (2-1/2" dia) (approx 4 per lb), cored and sliced (peel on)
    I cup water
    1/2 cup raisins
    Old Fashioned Quaker Oatmeal- Plain (1 cup dry)
    Graham Cracker Crumbs, Keebler, (1 cup)
    Land O Lakes, Spreadable Butter with Canola Oil, 1 Tbsp
    1 tsp vanilla
    1 tbsp cinnamon

Serving Size: Makes 8 slices

Heat the oven to 350F.

Wash, core, and slice the apples longitudinally (top to bottom); no need to remove the skin. In a large mixing bowl, combine apples, water, and raisins; then add the dry ingredients (reserving the butter for later). Add cinnamon to taste, and a teaspoon of vanilla; I sometimes add a pinch of nutmeg, too. Stir thoroughly.

Spray a glass pie plate with PAM or other cooking spray, and pour the apple mixture into the dish. Arrange small dabs of the butter across the top, and bake in a 350F oven until the top is golden brown and the apples are soft. Let cool for ten minutes, then slice as you would an apple pie, into eighths. (You can add ice cream or CoolWhip on top, but you'll have to add those calories yourself.) Tastes great warm or cold--apple pie without the crust!
