This is something my friend taught me how to make. I don't ever cook with fresh ingredients, so when she came for the weekend (she is no vinegars, moulds, yeast or fungi) I had to learn. Ingredients

1 tbsp canola oil
2 medium sized potatoes (mine weighed 233 G)
83 G Onions
1 Garlic Clove
3 G Chives
1 Extra Large Egg
Tips
You can change the quantities of any of the ingredients, this is just what I use when I am making it for myself.
Directions
Heat canola oil on med-low while you are dicing your potatoes.
Cut potatoes to desired size and add to pan.
Cook potatoes until they are done to your liking. In the meantime - dice your onions, chives and garlic.
Add veggie mixture once potatoes are cooked to your liking.
Cook with onions etc. stirring occasionally, until onions reach desired consistency.
Crack egg in a bowl and break yolk.
Add egg to pan, stirring all the time (the egg will cook fast)
Once egg is cooked, dish is done.
Salt and pepper to taste.
Serving Size: Makes two 1-Cup servings
