Ingredients

    1 teaspoon extra virgin olive oil
    1 tablespoon red onion, small dice
    1 slice red ripe tomatoe
    2 large egg whites
    1 teaspoon capers, rinsed and chopped
    1 ounce smoked salmon (lox)
    1 roll, Arnold 100% whole wheat sandwich thins

Tips

For a more substantial meal, pair with a piece of fruit or a glass of 100% fruit juice.

Like english muffins, try Thomas whole grain muffins.


Directions

1. Heat oil in a small nonstick saute pan over medium heat. Add onion and cook until softened, about 2 minutes.

2. Beat the egg whites and add to the saute pan. Add the capers and cooki, stirring constantly, until whites are set, about 40 seconds.

3. To make the sandwich, layer the egg whites, smoked salmon and tomato on the sandwich thin. Serve immediately.

    Very Good
    I toasted a whole wheat English muffin, substituted a tablespoon of finely diced kosher dill pickle for the capers, and doubled the smoked salmon, because that is how I store it in freezer, in 2 oz servings. I paired it w/a small apple & remaining slices from the tomato for a great breakfast!! YUM - 10/30/16
