Introduction

This is the best. They really fill you up with very little calories. Serve with beans-mmm. I am going to put my bean recipe here also so be sure to check it out- the best combo ever and vegan! Ingredients

    1 1/2 cups yellow cornmeal (organic preferred)
    1/2 cup unsweetened almond milk (or rice milk)
    1/2 cup water
    3/4 cup fresh or frozen corn kernels (organic non GMO)
    1/4 cup chopped green onions (aprox 3 thin onions)
    1/2 teaspoon salt
    1 tbsp olive oil

    pickled peppers to add spice ( calorie count included but can omit for the people who do not like spicy)



Tips

I add Pickleman's Pickled peppers but any jar of pickled peppers will do (I use the hot jalapeno pickled peppers to spice.) I usually make a double batch, one with the peppers and one without for my kids who do not like them so spicy.

Rice milk can be substituted for almond milk. Corn meal and corn kernels I use organic wherever possible- trying to avoid the GMO's.


Directions

Preheat oven to 400 degrees. Mix cornmeal, almond milk, water and olive oil in medium bowl. Stir until well combined. Add corn, green onions salt and pickled peppers. Mix well.

Line muffin pan with papers. Fill all 12 cups about 3/4 full and bake 20 minutes.
