Ingredients

1/2 cup cooked quinoa
2 egg whites
1/4 cup 1% milk or soy milk (soy used in this recipe)
1 TBSP brown sugar by SPLENDA
1/4 tsp vanilla
1/2 sliced small banana, divided
2 TBSP chopped walnuts
2 TBSP nonfat plain greek yogurt
Tips
I like to cook it until the edges are a little crisp. Note: I HATE eggs, but hardly noticed the taste or consistency in this recipe. Superfoods noted in this recipe are: Egg, quinoa, greek yogurt
Directions
In a bowl, whist 1/2 cup cooked quinoa with 2 eg whies, 1/4 cup 1 % milk or soy milk, 1 TBSP of splenda brown sugar, 1/4 tsp vanilla extract; stir in 1/4 sliced banana. Coat a medium skillet with spray; pour batter to make 3 or 4 pancakes (I like to make 4 so I can eat half). Cook over medium high heat, turning once, until firm. This will be about 3 minutes on each side. Top with 2 tbsp of nonfat plain greek yogurt, 1/4 slcied banana, and 2 tbsp of chopped walnuts. You could add a tsp or 2 of maple syrup, but this addition is not included in the nutrtional info.
