Whole Wheat Low Fat Veggie Lasagna Whole Wheat Low Fat Veggie Lasagna

Ingredients

    Kroger Whole Wheat Lasagna pasta
    3 cups of spaghetti sauce
    3 cups of fat free cottage cheese
    1 cup of Parmesan cheese
    1 Egg
    1 Eggplant
    1-2 summer squash
    3 cups fresh mushrooms
    2-3 cups spinach
    1/2 cup shredded carrots
    2-4 garlic cloves

Directions

Roast veggies for 20 mins at 350 F.
Slightly cook whole wheat pasta in boiling water for 10 minutes .
Mix cottage cheese, egg and Parmesan cheese together and drop by teaspoon onto lasagna layers.
Layer pasta, sauce, veggies, and cheese mix ending with veggies and sauce on top. in a 9 x 12 baking dish. Bake at 350 for 1 hour. (Can cover the dish with foil if it looks to be turning too brown around the edges.

Serving Size: 12-3 inch squares
