Introduction

Ingredients

    3/4 cup Whole Wheat or All purpose flour
    1/4 cup milled flax seed
    1/4 tsp salt
    3/4 tsp baking soda
    2 overripe bananas, mashed
    1 egg
    6 tbs oil or melted butter
    1/2 cup brown sugar
    1/2 tsp vanilla extract
    1/4 cup pecans, hazelnuts or walnuts, chopped

Directions

Preheat the oven to 375 degrees F.combine flour, flax seed, baking soda and salt, set aside.Beat mashed
bananas and sugar for 2 to 3 minutes.Add the oil or melted butter,egg and vanilla extract,beat well.To this add flour mixture and mix just until incorporated. Stir in nuts,spoon the batter into muffin liners and bake for about 20 minutes or until a tooth pick inserted into the center of the muffins comes out clean..

Serving Size: makes 6 cup cake size muffins
