Introduction

Ingredients

    2 tbsp cooking oil (I use safflower)
    2 tbsp flour (I use King Arthur Gluten Free all-purpose flour)
    1 onion, diced
    3 pounds extra-lean stew beef (top round)
    2 pounds baby carrots
    2-3 pounds red potatoes, skin-on, cut into halves/quarters
    Kosher salt (to taste)
    Gravy master (to taste)

Tips

You can add other flavors (spices/herbs) if you want, but I find that simple is better for this dish! You can also use corn starch if you don't have the AP GF flour, or regular wheat flour if you don't have the gluten free requirement.


Directions

Heat oil in large pot.
Place salt and flour into ziploc bag, add beef, and toss to coat.
Add beef and onions to heated oil in pot and brown.
Add water just to cover meat and simmer 20 minutes.
Add carrots to pot. Add water just to cover, and simmer 20 minutes.
Add potatoes to pot. Add water just to cover, and simmer 20 minutes.
Add salt and Gravy Master to taste.

Serving Size: Makes 10-12 servings
