Number of Servings: 4

Ingredients

    *Dole Pineapple Chunks in 100% Pineapple juice No Sugar Added, 2 cup
    *Log Cabin Sugar Free Syrup, 10 serving
    *President's Choice Prepared Dijon Mustard, 4 tsp
    Jalapeno Peppers, 1 pepper
    Salt, 2 tsp
    Pepper, black, 1 tbsp
    Atlantic Salmon (fish), 1 fillet

Directions

Place fish on a baking sheet covered in foil.
Salt and Pepper the fillet.
In a separate bowl, mix the Sugar Free Maple Syrup and the Mustard.
Drain Pinneaple and chop up the japaleno.

Pour 1/2 of the syrup and mustard mix over the fish till covered. Take pineapple and japaleno and mix with the rest of the mustard/syrup mix and pour over the fish.

Cook at 450 degrees (on grill is better), until fish is flaky and syrup mustard mixture starts to carmelize. Approximately 20 min.
