Introduction

    olive oil
    lemon juice
    salt and pepper
    cumin
    onion
    garlic
    sweet bell peppers (multi colored)
    avocado
    tomato
    pinto beans

Directions

cook rice according to directions.
boil chicken until done and cut up into bite sized pieces. cut up veggies while chicken and rice cook. pour olive oil into large bowl. add rice. squeeze lemon juice over rice. stir. add seasonings, chicken and veggies.
