Ingredients
-
2 White Potatoes (5.3 oz. each)
1/4 cup chopped Cucumber (with peel)
1/4 cup chopped Onion
1/4 cup chopped Celery
2 tbsp. Relish (I used Mt. Olive Hotdog Relish)
2 tbsp. Light Mayo
2 tsp. Yellow Mustard
1 tsp. Salt (or to taste)
1 tsp. Ground Black Pepper (or to taste)
Directions
-Microwave your potatoes for 3 minutes or until just cooked.
-Dice potatoes and place in large mixing bowl.
-Chop cucumber, onion, and celery to uniform size (smaller than your potato pieces) and add to bowl along with potatoes.
-Add relish, light mayo, and yellow mustard to other ingredients in mixing bowl and combine well.
-Salt and pepper to taste, and mix one last time.
Serving size is 1/2 cup... enjoy!
