Ingredients

    - 1 spaghetti squash

    - 1 TBSP. vegetable oil

    - 1/2 onion, chopped

    - 1.5 Cups tomato, diced

    - 1 tsp. minced garlic

    - 1/3 Cup feta cheese, crumbled

    - 5 leaves basil, fresh

    - 2 TBSP. black olives

    - Salt and Pepper (to taste)

Directions

PREPARE THE SQUASH:

Take a fork, and stab holes all around the spaghetti squash. This will allow ventilation during the cooking process (and prevent an explosion in your microwave!)

Place in a microwave-safe plate, and microwave on high for 12 minutes. When done, set aside and allow to cool.

PREPARE REMAINING INGREDIENTS:

- Put vegetable oil in a pan and saute onion until softened and slightly brown.

- Add tomato and garlic, and saute for 3 more minutes. Set aside.

- Slice squash in half (length wise), and with a fork, begin scraping the flesh inside. Your result should be multiple, "spaghetti-like" strings. Put these in a separate bowl as you make them.

- Once the squash is emptied of its "spaghetti," mix in the onion-tomato-garlic combo.

- Once mixed, add in the olives, basil, and feta.

- Add salt and pepper if you'd like. Enjoy!
