Introduction

Number of Servings: 2

Ingredients

    2 Cups Carrots, sliced long and short
    1/2 Spanish Onion or 1 small onion, sliced thin
    1/2 Cup Green Peppers, diced
    1/2 Cup Low Sodium V-8 Juice
    3 Tbl White Vinegar
    1 Tbl Olive Oil
    2 Tbl Splenda
    1/2 tsp Yellow Mustard

Tips

Divide this in two and have as a side dish or divide into 4 - half cups and have as a salad garnish.


Directions

Put carrots in large pot. Pour enough water into pot to just cover; bring to boil and cook until tender, about 7-8 minutes. Drain water; transfer to large bowl.
Gently toss Spanich onion and green peppers with carrots.
Whisk V-8, vinegar, oil, sugar, mustard in small bowl until well mixed. Drizzle mixture over carrot mixture and gently toss to coat.

Serving Size: Makes 2 - 1cup servings
