Introduction

After reading several recipes for avocado pudding on my favorite food blogs, I decided to make my own. It has quickly become one of my favorite things to eat, and I'm excited to share it with the SP community. This pudding is healthy and filling, and is great as a quick breakfast or snack. I love it because I can make it in about five minutes, and don't have to cook it! I like a little crunch with mine, so I add some crushed almonds and dark chocolate chips for added texture and flavor. Ingredients

    1 fresh, ripe banana (medium to large)

    1 large avocado (any variety will be great, but I prefer Haas)

    1 T water

    Optional toppings:

    Small handful of whole almonds

    1/2 T Ghirardelli 60% Bittersweet Chocolate Chips

Tips

Cut the unpeeled avocado in half, pulling apart, and cutting each half into 1/2"-1" cubes. Scoop them out with a spoon. Slice the banana instead of putting in the blender whole.


Directions

In a blender or food processor, add the avocado, banana, and water, and blend for about two minutes, or until the mixture is smooth. Add more water to reach your preferred consistency, and blend for another 20-30 seconds.

Divide the pudding evenly between two waiting dessert glasses. Crush your almonds, and sprinkle across the top along with the chocolate chips. Enjoy.
