Introduction

I love taking boxed soup bases and making them my own by adding my favorite veggies and grains. I love taking boxed soup bases and making them my own by adding my favorite veggies and grains.

Ingredients

    Trader Joe's or other brand Latin Style Black Bean Soup.
    1 chopped yellow bell pepper
    1 small jalapeno
    1 Leek
    3 cups of cooked Lotus Foods Volcano Rice
    1 bunch of cilantro
    2 Medium green squash
    2 Great Value frozen chicken breasts

Tips

This is a dense soup. I dish out 1 cup and pair with salad. You could pair it with corn tortillas and avocado for an awesome soup lunch.


Directions

Chop all of your veggies (w/o jalapeno and cilantro) and cook in a pot until they are still crunchy but have reduced somewhat. Cook chicken separately in lime and add salt to taste.

The soup is cooked so when the veggies and chicken are done add them, then add chopped jalapeno (seeds for heat) and cilantro (I leave my cilantro whole or tear it apart with my hands, this makes the cilantro flavor release better).

I would allow the soup and all the extras to mix together on low heat for about 10 min. Then serve.

Serving Size: 1 cup
