I love this soup. I make it at least twice a month and portion it out for my husband and I to take for lunch to work. I love this soup. I make it at least twice a month and portion it out for my husband and I to take for lunch to work.

Ingredients

    4 Chicken Breasts
    2 Cans Chicken Broth
    2 Cans Red Enchilada Sauce
    2 Cans Diced Tomotoes
    1 Can Black Beans (rinsed)
    1 Can Yellow Corn
    2 Small Cans Diced Green Chilies
    1 Yellow Onion (diced)
    3 Tablespoons Cumin
    2 Tablespoons Chili Powder
    Cayenne Pepper ( depends on your spice tolerance. I use 5 tablespoons, but I LOVE spicy stuff)
    2 Cups of Water
    Salt/Pepper to taste

    Low Calorie Sour Cream/Cheese optional for toppings (not figured into nutritional information)

Directions

Combine all ingredients into a dutch oven or crock pot, except chicken. Stir together ingredients and drop in 4 chicken breasts (can be frozen). If using a crock pot, cooking time is 5-6 hours on low. Half way through, pull chicken breasts out and shred chicken using two forks. Put chicken back in. If using a dutch oven, soup cooking time is about 2 hours. Same thing with chicken. Pull out half way through and shred and put back in soup and allow it some time to soak up the juices.

I prefer to use a dutch oven, as it seems to come out a bit thicker than it does in a crock pot.
