Ingredients

    2 green onions chopped

    2 tsp. olive oil

    1/2 cup uncooked small red lentils

    1/4 cup dry roasted peanuts

    1-1 1/2 cups water

Tips

Be careful to not overcook the lentils because they have a tendency to fall apart and become mushy when overcooked!


Directions

Sautee the green onions in a small cooking pot over medium heat. Add one cup of water, the red lentils, and the dry roasted peanuts. Stir. Allow the mix to come to a simmer, stirring every so often till the water is absorbed. Taste to see if the lentils are softened to the point of being softer yet slightly chewy. If necessary add more water. Season to taste.
