Number of Servings: 12

Ingredients

    1.5 pounds beef roast
    1.5 cups beef stock
    1/2 cup diced green chiles
    1 tsp black pepper
    12 8" soft flour tortillas
    shredded lettuce
    1 1/2 cup shredded cheddar cheese
    12 TBSP Daisy light sour cream

Tips

I usually cook a 3 pound roast to allow for leftovers for lunches during the week.


Directions

Trim as much fat as possible from beef and place meat in crockpot. Add peppers, black pepper and beef broth. Cover and cook on low heat for 8 hours. Shread meat and leave in crock pot with lid off for 30 minutes to allow juices to thicken. Place shredded beef on tortilla and tpo with remaining ingredients.
