This is a really great sweet potato casserole that goes great with any entree. It is relatively low cal, carb and sugar. It's great for diabetics or those that jut want to watch their caloric intake. Ingredients

    sweet potatoes
    splenda brown sugar blend
    real butter-no salt
    egg whites
    vanilla extract
    cinnamon
    apple juice
    salt
    skim milk

Tips

To make this recipe practicaly sugar free use only splenda in place of th splenda brown sugar blend.


Directions

. Preheat oven to 375F. Bake potatoes 50 to 60 minutes or until very tender. Cool 10 minutes; leave oven on. Scoop pulp from warm potatoes into large bowl; discard potato skins. Add margarine to bowl; mash until potatoes are fairly smooth and margarine has melted. Stir in milk, brown sugar, bourbon, cinnamon and vanilla; mix well
